Ingredients:

  • 1 stick butter
  • 1 cup. flour
  • 1/4 cup. powdered sugar
  • melt butter in pan. add sugar and flour and press into baking dish (8 x 8).

Directions:

  1. Combine:
  2. 1 c. granulated sugar
  3. 2 Tbsps. flour
  4. 1/2 tsp. baking powder
  5. 2 Tbsps. lemon juice (and rind)
  6. 2 eggs
  7. Beat mixtue.
  8. Pour over crust and bake at 350 degrees for 25 minutes.
  9. Sprinkle powdered sugar over top.
  10. Cut while warm.

  12. Note: You can double this recipe and bake in a dish 9 x 13.
