Ingredients:

  • 2/3 cup flour
  • 2/3 cup milk
  • 1 egg
  • 1/2 tbsp butter, melted
  • dash of salt
  • filling
  • 1/2 block cream cheese
  • 1 tbsp sugar
  • 1/2 tsp vanilla
  • topping

Directions:

  1. For Crepes:
  2. Heat small skillet with non-stick spray over med. heat.
  3. Combine crepe ingredients and beat until smooth.
  4. Pour about 1/4 cup of batter into skillet and tilt skillet around to spread batter thinly and evenly.
  5. Cook only a minute or so on one side (until it is lightly browned) and flip to cook other side.
  6. Repeat 5 more times.
  7. For Filling:
  8. Place cream cheese in bowl and heat in microwave for 30 seconds.
  9. Cream cheese should be smooth and easy to stir.
  10. Stir in sugar and vanilla.
  11. Assembly:
  12. Spread cream cheese mixture inside center of crepe. (You don't need much, it's very rich!)
  13. Spread top with strawberry preserves.
  14. Fold sides of crepe shut like a burrito.
  15. Place fold side down on plate and top with a dallop of whip cream and sliced strawberries.
  16. **Variations: My sister likes sour cream and melted chocolate chips as her filling. Also, the strawberries can be replaced with any fruit...blueberries, raspberries, apricots...
