Beets With Orange Sauce

Ingredients:

  • 2 (1 lb) cans beets, sliced
  • 2 tbsp sugar
  • 4 tbsp cornstarch
  • 2/3 cup orange juice
  • 6 tbsp butter
  • salt , to taste

Directions:

  1. Heat beats in their liquid.
  2. In another small pan, combine sugar, cornstarch and salt.
  3. Blend in orange juice, 2 tsp of rind and cook over medium heat, stirring constantly, until thickened.
  4. Stir in butter untli melted.
  5. Drain hot beets, pour sauce over them.
  6. Sprinkle with remaining rind.
  7. Serve hot.
