BBQ Chicken Pizza

Ingredients:

Directions:

  1. Put the first 9 ingredients in order in a bread machine. Put it on the dough cycle and let it do its thing. This should take about 90 minutes.
  2. Slice the chicken breast, set aside.
  3. Heat up a frying pan with the olive oil and allow the onions to cook down. Sweet onions work best.
  4. Add garlic to onions and cook down.
  5. Add the chicken and saute until almost cooked through, about 5-8 minutes.
  6. Add the pineapple and some pineapple juice.
  7. Take off stove and set aside. Drain if needed.
  8. Split pizza dough into two rounds and press into prepared pan. I use Pam and a little corn meal (course) so it doesn't stick.
  9. I let it rise for about 10 minutes (turn on oven, let it warm, then turn it off and put pans in the oven for a warm rise).
  10. Spread BBQ sauce onto pizza dough.
  11. Split chicken mixture among the two pizza doughs.
  12. Sprinkle with cheese. I used a mixture of mozzarella, provolone, cheddar, and asiago.
  13. Bake for 10-15 minutes at 425.
