Ingredients:

  • 2 large bananas
  • 1 1/4 cups sugar
  • 2 eggs
  • 1/2 cup shortening
  • 4 tbsp milk
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp salt

Directions:

  1. Combine shortening and sugar. Add mashed bananas and beaten eggs. Then add milk and vanilla. Combine dry ingredients and add to first mixture.
  2. Line muffin tins with paper cups (medium size) and bake in 375F oven for 20 minutes.
