Ingredients:

  1. Sugar Pastry:.
  2. Mix flour and salt.
  3. Add butter. Mix using your hands.
  4. Add sugar and 4 tbsp of water.
  5. Mix very well.
  6. Roll into a ball and wrap in cling wrap and chill for 20 minutes.
  7. Pastry Cream:.
  8. Combine milk and vanilla and heat in stove.
  9. Whisk fast so that it won't burn.
  10. In a medium bowl, mix sugar and eggs with a wooden spoon till yellowish white in color.
  11. When milk mixture is boiling, turn off the heat. Let it cool for a few minutes.
  12. Then gradually add the milk mixture to the egg mixture.
  13. Whisk while adding the milk.
  14. Mix well with wooden spoon.
  15. Put it back on the sauce pan and heat it again.
  16. Stir well until mixture becomes thick.
  17. Banana Flan:.
  18. After chilling the dough, knead it using 2 baking sheets.
  19. Roll the dough and put in pie plate.
  20. Put parchment paper on top and chill again for 5 minutes.
  21. Take out dough from the ref and place mongo beans as weights.
  22. Bake in the oven 200°C for 20-25 minutes.
  23. Take out in the oven, remove the mongo beans and parchment paper.
  24. Heat again till golden brown.
  25. Once cooked, assemble the pastry cream on top of the dough using pastry bag.
  26. Then place the sliced bananas on top of pastry cream as toppings.
