Ingredients:

  • 1 1/4 cup. flour
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/3 cup. shortening
  • 2/3 cup. sugar ( fructose for diabetics)
  • 1/4 cup. nuts of your choice (optional)

Directions:

  1. Sift first four ingredients into small bowl.
  2. Beat next two ingredients in large bowl.
  3. Add eggs and beat until combined.
  4. Alternately add flour mixture and bananas, a little at a time, beating after each addition.
  5. Add nuts and stir by hand.
  6. Bake at 350 degrees in a greased loaf pan for 50-60 minutes or until toothpick comes out clean.
  7. ***If using smaller loaf pans, check doneness with toothpick after 20-30 minutes. Muffin tins take 20-25 minutes.
  8. ***For a coffee cake-type bread, try adding your own crumb topping to the top and/or middle of batter before baking.
