Ingredients:

Directions:

  1. In large saucepan cover onions and lemon rind with water then bring to boil and boil 5 minutes.
  2. Drain then rinse under cold running water and drain again then discard lemon rind.
  3. Peel onions and arrange in rectangular baking dish and pour olive oil over onions.
  4. Bake uncovered at 375 basting occasionally for 40 minutes.
  5. Add raisins, wine, vinegar, sugar and pepper then bake another 30 minutes
