BAKED RED ONIONS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cabrera Estate in Malakoff, Texas in 1986. Ingredients:
3 red onions halved |
rind of 1 lemon cut into strips |
1/4 cup olive oil |
1/2 cup raisins |
1/4 cup port wine |
2 tablespoons cider vinegar |
1/2 tablespoon paced brown sugar |
1/2 teaspoon freshly ground black pepper |
Directions:
1. In large saucepan cover onions and lemon rind with water then bring to boil and boil 5 minutes. 2. Drain then rinse under cold running water and drain again then discard lemon rind. 3. Peel onions and arrange in rectangular baking dish and pour olive oil over onions. 4. Bake uncovered at 375 basting occasionally for 40 minutes. 5. Add raisins, wine, vinegar, sugar and pepper then bake another 30 minutes |
