Ingredients:

Directions:

  1. Preheat oven to 425
  2. Grease a baking dish
  3. Season the chicken with salt and pepper
  4. Layer the chicken, onion, mushrooms, and zucchini, in order, in the baking dish
  5. In a small bowl, combine the garlic, tomatoes, basil, and oregano, pour over top
  6. Cover tightly with aluminum foil
  7. Bake for 30 minutes, remove the foil and bake another 10-15 minutes, or until the chicken juices run clear
  8. Sprinkle with Parmesan cheese, and serve over rice
