Bacon-Tomato Spinach Salad

Ingredients:

  • 4 slices bacon, diced
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 6 cups torn spinach
  • 2 medium tomatoes, cut into wedges

Directions:

  1. In lg skillet, cook bacon until crisp, spoon onto paper towels.
  2. Reserve 2 T of the bacon drippings in the skillet.
  3. To drippings, add salad dressing, mustard, salt and pepper.
  4. Cook and stir on low until heated through.
  5. In lg bowl, combine spinach, tomatoes, and cheese.
  6. Drizzle warm dressing over the spinach.
