Ingredients:

Directions:

  1. Dice tomatoes and avocado.
  2. Roughly chop 1/2 bunch of coriander.
  3. Dice red onion.
  4. Place all ingredients in a bowl.
  5. Season with lime juice and cracked black pepper to taste.
  6. Using a fork, toss gently to combine.
  7. This salsa can be spooned onto a bed of spinach leaves, crisp bacon, toasted croutons and a mustard viniagrette dressing.
