Asparagus Prosciutto Rolls

Ingredients:

  • 3/4 lb prosciutto , 18 slices
  • salt and pepper to taste
  • 1/3 cup vegetable oil

Directions:

  1. Whisk together oil, vinegar and mustard. Season with salt and pepper. Slice prosciutto in half lengthwise; spread each slice with goat cheese and roll around asparagus. Drizzle with dressing.
