Ingredients:

  1. Custard:
  2. Combine sugar and cornstarch in a saucepan.
  3. Stir in milk until smooth.
  4. Cook and stir over medium-high heat until thickened and bubbly.
  5. Reduce heat; cook and stir for 2 minutes.
  6. Remove from heat; stir 1 cup into yolks.
  7. Return all to pan.
  8. Bring to a gentle boil; cook and stir for 2 minutes.
  9. Remove from heat; stir in vanilla.
  10. Cool slightly.
  11. Cover surface of custard with waxed paper; chill.

  13. Turnovers:
  14. Place apples in a bowl; sprinlke with lemon juice.
  15. Add butter.
  16. Combine sugar, cinnamon and corn-starch; mix with apples and set aside.
  17. Divide pastry into eight portions; roll each into a 5-in. square.
  18. Spoon filling off-center on each.
  19. Brush edges with milk.
  20. Fold over to form a triangle; seal.
  21. Crinp with tines of fork.
  22. Make steam vents in top.
  23. Place on greased baking sheets.
  24. Chill 15 minutes.
  25. Brush with milk.
  26. Bake at 400 degrees for 35 minutes. Serve warm with custard.
  27. Yield: 8 servings.
