Ingredients:

  • 3 eggs
  • 1 1/2 cups vegetable oil
  • 2 cups chopped unpared cooking apples
  • 1 1/2 cups sugar
  • 1 tsp vanilla
  • 3 1/3 cups flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp clove
  • 2/3 cup chopped nuts
  • 2/3 cup raisins

Directions:

  1. Heat oven to 350 degrees.
  2. Grease and flour 2 loaf pans.
  3. Beat eggs, oil, apples, sugar and vanilla on low speed with electric mixer, 1 minute.
  4. Add flour, baking soda, baking powder,salt, cinnamon and cloves.
  5. Beat on low speed, scraping bowl occasionally, until moistened, about 15 seconds.
  6. Beat on medium speed 45 seconds.
  7. Stir in nuts and raisins.
  8. Spread in pans.
  9. Bake at 350 degrees for 55 to 60 minutes or until wooden pick comes out clean.
  10. Cool 10 minutes, remove from pans.
  11. Cool completely before slicing.
