Ingredients:

Directions:

  1. Wash and peel (or scrub) the potatoes.
  2. Cut into long half inch thick pieces.
  3. Microwave for 6 to 8 minutes, covered, for faster cooking.
  4. Heat the oil in a wide skillet on high heat.
  5. Add mustard seeds and cover.
  6. As soon as the seeds start popping, reduce the heat and add cumin seeds.
  7. As they change color, add garlic.
  8. Add the half cooked potatoes, cauliflower pieces, and remaining seasonings (except garam masala and mango powder).
  9. Cook covered until ready (about 15 minutes).
  10. Stir and sprinkle water if needed; lower the heat to prevent burning.
  11. Mix in garam masala, mango powder, and chopped red onion.
  12. Serve hot garnished with green coriander.
