  1. Slowly melt the Pepper Jack cheese over a double boiler. When completely melted, stir in the half and half until the mixture becomes creamy and smooth. Next, add in the onion, pepper, tomato, and chopped spinach. Place dip into a serving bowl, and serve with bread or warm tortilla chips.
