Acorn Popovers With Leeks

Ingredients:

Directions:

  1. Coat 8 cups of a standard muffin pan with cooking spray. Fill empty cups
  2. With 1/2 inch of water. HEAT OVEN TO 450 DEGREES. In bowl, whisk together flour, acorn flour and salt. In 2nd bowl, whisk together eggs and milk. Add to flour mixture, stir until blended. Fold in cheese, bacon, and leeks. Fill cups with 1/3 cup batter in each. Bake 15 min. REDUCE OVEN TEMP TO 350 DEGREES and bake until browned and puffed. Remove popovers from oven and remove from pan. Pierce sides once. SERVE WARM WITH BUTTER.
