100 Year Old Souffle

Ingredients:

  • 3 tbsp butter
  • 3 tbsp flour
  • 1 cup milk
  • 1/2 tsp salt

Directions:

  1. Melt butter in a saucepan.
  2. Sprinkle in flour.
  3. Add milk.
  4. Stir until thickened.
  5. Add grated cheese.
  6. Pour mixture over beaten egg yolks.
  7. Fold in beaten egg whites.
  8. Pour into buttered ramekins.
  9. Run thumb around lip of ramekins.
  10. Bake for exactly 30 minutes at 350 degrees.
