Yellow Curry with Chicken

Ingredients:

  • 3/4 cup. coconut milk
  • 8 oz. chicken
  • 1/4 cup. onion, chopped
  • 1 cup. potato
  • 1/2 cup. chicken broth
  • 1 tbsp. sugar
  • 1 tbsp. chili powder
  • 1 tsp. red pepper
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp. curry powder

Directions:

  1. Cube and boil potatoes.
  2. Chop onion and put in frying pan with water.
  3. Pound and cut chicken into small pieces. Add to frying pan.
  4. Add potatoes and chicken broth.
  5. Season the contents of the frying pan with curry powder.
  6. In separate pan, combine coconut milk and curry powder till it starts to steam.
  7. Add milk mixture to chicken pan along with sugar, chili powder, and red pepper.
  8. Let sit till chicken is done and sauce starts to thicken. Should be a deep yellowish color.
  9. Salt and pepper to taste.
  10. Serve with white rice.
