White Chocolate Chip Cranberry Banana Bread With Coconut Flour

  1. Grind one small apple with a Tablespoon of water. For the Stevia, I used Truvia spoon-able sweetener. You can find coconut flour from Uncle Bobs Red Mill. I also used plain Greek yogurt. Be sure to use parchment paper in the bread pan or it will most likely stick.
  2. In a bread maker pan, add all the wet ingredients together (Molasses, Apple, Egg Whites, Greek yogurt, Vanilla, ripe Bananas) and mix well. Add Flours and make a well in the center of the bread pan. Put the Baking Powder, Baking Soda, and Salt in the well. Set the bread maker for dough and let mix for 15 minutes or more then open the lid and add the White Chocolate Chips and Dried Cranberries. Let dough mix for another 15 minutes. Stop the bread machine and pour batter into a 9 inch by 4 inch bread pan lined with parchment paper sprayed with no stick spray.
  3. Bake at 350 F for 40 minutes in a oven . Cool before cutting.
