Warm-Your-Soul Beef Stew!

  1. Chop up beef if not already done. Put the dusting flour on a plate and coat each piece of beef with flour.
  2. Heat the olive oil in a large pan on high heat. Chop up the onions and garlic. Once the oil is heated add the onions. Once translucent, add the beef and start browning. After a minute add the garlic.
  3. Once the beef is browned, about 8-10 mins, add the red wine. Be generous! Let this bubble and boil for a good 10-15 mins at medium heat. Then add the beef broth.
  4. Meanwhile, cut up the celery, celery greens, carrots, potatoes and open the can of tomatoes. Add these to the pot. Let this simmer at medium to low heat for 1-2 hours.
  5. Toward the end begin to thicken the stew by mixing small amounts of flour and water and adding it to the pot. Each time continue to let the pot simmer. Keep repeating until you reach a thickness just shy of what you like (the stew will continue to thicken with time).
  6. Enjoy with some bread, or cooked rice, or pasta or some crackers! And a glass of the red wine, if there's any left over!
