Twice Baked Cheddar Garlic Potatoes

Ingredients:

Directions:

  1. Preheat oven to 400°.
  2. Cut off and discard top third of garlic and wrap remainder in foil.
  3. Prick potatoes with a fork and bake with garlic on middle rack of oven for 45 minutes.
  4. Remove garlic to cool and continue baking potatoes until tender, about 20 minutes more.
  5. Squeeze garlic cloves into a bowl and discard skins.
  6. Stir in butter, sour cream and 1 cup of the cheddar cheese.
  7. Cut potatoes lengthwise, removing top fourth of each potato and discard.
  8. Scoop out potatoes and add to cheese mixture.
  9. Mash with a fork to combine.
  10. Season with salt and pepper to taste and divide among potato shells.
  11. Arrange potatoes in a small baking pan and sprinkle with remaining 1/2 cup of cheese.
  12. Bake until heated through, about 15 to 20 minutes.
