Turkey Cutlets Stuffed With Apples and Cranberries

Ingredients:

  • 3 lbs 99% fat-free turkey breast cutlets
  • 2 medium apples
  • 1/2 cup cranberries
  • 1 medium orange

Directions:

  1. Core and peel apples.
  2. Cut into small chunks.
  3. Combine with cranberries and a little water.
  4. Zest orange into apples and cranberries.
  5. Peel orange getting as much white stuff off as possible.
  6. Cut into small pieces and add to apples and cranberries.
  7. Cook over medium heat.
  8. Add a packet or two of splenda for taste and maybe some cinnamon.
  9. Cook until apples are soft, but still retain their shape.
  10. Lay out the cutlets and carefully cut a pocket lengthwise into each one.
  11. Spoon cooled filling into each cutlet and seal with toothpicks.
  12. Do not overfill.
  13. Place in baking baking dish.
  14. Cover with remaining apple mixture.
  15. Bake in 350 degree oven 25 to 35 minutes until internal temperature reaches 165.
