Ingredients:

Directions:

  1. Preheat oven to 350
  2. Sautee garlic in canola oil
  3. Add onions and sautee
  4. Add diced vegetables and sautee
  5. Add spices
  6. Add tuna, flaked, and mix well
  7. Spray large rectangular casserole dish with pam
  8. Layer casserole with cooked quinoa, vegetables, and cottage cheese
  9. Add shredded cheese on top
  10. Add a little water to prevent drying out
  11. Bake at 350 with foil for 30-40 minutes
  12. Remove foil and bake until cheese browns
