Ingredients:

  • 1 lb whole tamarind pulp, pods
  • hot water
  • 2 quarts water
  • 1 1/2 cups granulated sugar or 1 1/2 cups honey

Directions:

  1. Cover tamarind pods with hot water.
  2. Let stand 1 hour; drain.
  3. Rinse and drain.
  4. Remove pods, stems and strings from tamarinds.
  5. Place pods in 2 quarts of water.
  6. Let stand at least 8 hours or overnight; strain, reserving liquid.
  7. Press as much tamarind pulp as possible through a sieve.
  8. Mix pulp, reserved liquid and the sugar or honey.
  9. Heat just until the sugar or honey melts.
  10. Cover and refrigerate until chilled.
  11. Serve over ice.
