Syd's Saffron Rice

Ingredients:

  • 1 tbsp ghee
  • 2 cups basmati rice
  • 3 1/2 cups chicken broth
  • 1 pinch saffron
  • 1/2 cup frozen peas
  • 1/4 cup cilantro

Directions:

  1. Heat ghee in pan. (You can substitute clarified butter, olive, or canola oil for the ghee.).
  2. Saute onion.
  3. Add rice and saute until you release the rice aroma.
  4. Add broth and saffron.
  5. Bring to pressure in your pressure cooker for 10 minute if using white basmati, 20 min for brown.
  6. Release pressure, add chopped tomato, peas, and cilantro. Stir and let sit while you prepare the rest of the meal.
  7. Enjoy.
