Sweet Potato and Veggie Saute

Ingredients:

Directions:

  1. Chop everything into bite-sized pieces
  2. Saute onions in olive oil until limp and starting to caramelize
  3. Deglaze pan with 1 cup of water
  4. Add potatoes, carrots and celery and cook covered at a low simmerfor 8-10 minutes
  5. Season with kosher salt, cayenne and black pepper to taste
