Ingredients:

Directions:

  1. Melt chocolate and dip top of cones to cover rim in chocolate.
  2. Stand cones upright in a gllass or a cup.
  3. Drizzle some chocolate into and around inside the cones.
  4. Chill cones to harden chocolate.
  5. Coat 8 strawberries in any remaining chcolate and chill to harden
  6. Process 2 pints of strawberries in food processor with 2 Tbs lemon juice and 5 Tbs sugar and a pinch of salt..
  7. Strain in mseh strainer ( I did not do this ) and cook puree over medium heat, stirring frequently to reduce puree almost by half.
  8. Pour puree into a bowl, cool and chill well.
  9. Whip cream and cheese until stiff.
  10. Fold in chilled berry puree in two additions.
  11. Chill till set and firm about 1 to 2 hours.
  12. Assemble: Place puree into cones till almost to the top.
  13. Place in a chocolate covered strawberry.
  14. Refrigerate until ready to serve
  15. Serve with any remaining berry puree on the side.
