Spicy Mashed Sweet Potatoes With Raisins

Ingredients:

  • 6 tbsp butter
  • 1/2 tsp ginger
  • 1 tsp cinnamon
  • 1/4 tsp cayenne (optional)
  • 1 -2 tbsp brown sugar (optional)
  • 2 tbsp raisins , soaked in water for 15 min

Directions:

  1. Peel the sweet potatoes and cut them into pieces.
  2. Boil in salted for about 15-20 minutes, until soft.
  3. Drain and mash with a fork.
  4. Add butter, salt and pepper, ginger and cinnamon, (and cayenne and/or brown sugar if desired) and beat well.
  5. Add the drained raisins.
