Spiced up Apple Cake

Ingredients:

  • 2 1/2 cups flour
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground ginger
  • 1/2 tsp baking soda
  • 1/3 cup raisins
  • 1 1/2 cups packed dark brown sugar
  • 3 large eggs
  • 1/2 cup milk
  • 1/2 cup applesauce
  • 1/3 cup apple cider
  • 2 tbsp sugar

Directions:

  1. Combine flour, baking powder, spices, baking soda in bowl. In another bowl combine apples, raisins and walnuts, add 3 tablespoons of flour to mixture and toss to coat.
  2. Combine the butter, brown sugar and vanilla in a mixing bowl and cream until the mix is creamy. Beat in the eggs, stir in the milk and applesauce.
  3. Add the remaining flour mixture to the butter mixture beating until blended.Stir in the fruit and nut mixture. Pour batterr into a greased and floured 12 cup bundt pan. Bake at 350 for about an hour or until toothpick comes out clean. Let cake cool in pan for an hour.
  4. Combine syrup ingredients in a saucepan, heat to a simmer. When the sugar dissolves remove form heat, set aside for 15 minutes.
  5. Take out of pan. prick it all over with a skewer. brush the cake with the syrup until it has been absorbed. Dust with confectioners sugar if desired.
