Speedy Black Bean Soup

Ingredients:

Directions:

  1. Heat oil and cook onions until slightly brown, stirring occasionally.
  2. Add one can black beans and smash them - I use a potato masher!
  3. Raise heat to high and add broth and 2nd can of beans, leaving them whole.
  4. Stir well and add remaining ingredients.
  5. Stir again, cover, and bring to boil.
  6. Reduce to low and simmer to let flavors blend, 8-10 minutes, stirring often.
  7. Remove bay leaves and serve!
