Ingredients:

  • 1 1/2 cups flour
  • 3/4 tsp salt
  • 3/4 tsp sugar
  • 1/3 tsp baking powder
  • 3/4 cup boiling water
  • 2 tsp sesame oil
  • 4 tsp peanut oil

Directions:

  1. In a medium bowl, combine the flour, salt, sugar and baking powder. With a fork, stir in the boiling water until the dough forms a ball.
  2. Transfer to a floured surface and knead for 5 minutes or until smooth. Cover with plastic wrap and let rest for 1 hour.
  3. Transfer the dough to a floured surface and knead again until smooth.
  4. Roll out to a 11 by 8 inch rectangle.
  5. Brush the dough with the sesame oil, sprinkle with the scallions and press them into the dough.
  6. Roll up the dough jelly roll style and then slice into 4 pieces.
  7. Cover and let rest for 10 minutes.
  8. Preheat oven to 250.
  9. Roll out each piece of dough to a 5 inch round.
  10. In a small nonstick skillet, cook 1 pancake in 1 teaspoon of the peanut oil. Transfer to a baking sheet.
  11. Repeat with the remaining dough and oil.
  12. Bake for 5 minutes.
