Savory Hominy With Canadian Bacon

Ingredients:

  • 3 cups milk
  • 2 eggs
  • 1 cup hominy
  • 1 tsp salt
  • 1 1/2 tbsp onion juice
  • 3 tbsp finely chopped green peppers

Directions:

  1. Beat milk and eggs slightly.
  2. Stir in hominy, salt, onion juice and green peppers
  3. Pour into a greased casserole dish
  4. Bake at 350 degrees for 1 - 1 1/2 hours or until the hominy is soft
  5. Serve with the broiled Canadian Bacon on top.
