Roasted Garlic Potatoes

Ingredients:

  • 1 3/4 lbs potatoes, diced
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt
  • 4 cloves garlic
  • cooking spray

Directions:

  1. Preheat oven to 425 degrees combine first 4 ingredients in a med bowl toss well to coat Spoon potato mixture into an 11x 7 inch baking dish coated with cooking spray.
  2. Bake for 35 minutes or until brown on outside and tender on inside, stirring occasionally.
