Ingredients:

  • cooked rice (can be leltover rice,plain or flavored, instant or regular rice)
  • 8 eggs
  • salt and pepper to taste

Directions:

  1. Place hot cooked rice on plate, put some butter on rice.
  2. Fry 2 eggs per serving, salt and pepper to taste,place on top of rice.
  3. You can also top with cheese, salsa, green chilies, or anything you like.
