Raw Creamy Sun-Dried Tomato Pasta

Ingredients:

Directions:

  1. In a food processor, combine pine nuts, olive oil, garlic, lime juice, sea salt, tomato, balsamic vinegar and nutritional yeast. Blend until creamy.
  2. Add sun dried tomatoes and blend but leaving some tomato chunks.
  3. Add water until sauce is at desired consistency. Sauce should be decently thick.
  4. Using spirilizer, made noodles out of the zucchini and sweet potato.
  5. Put noodles in a pan on the stove and add sauce. On LOW heat, mix together noodles and sauce until warm to the touch, being careful not to overheat.
