Raw Creamy Sun-Dried Tomato Pasta |

You can leave out the nutritional yeast if you are 100% raw. I'm never sure if the balsamic vinegar is raw or not so it's up to you for that one. For me it's small enough amounts that I don't mind it. Ingredients:
1 cup pine nuts, unsoaked |
1/4 cup olive oil |
1 garlic clove, peeled |
1/2 lime, juice of |
1 teaspoon sea salt |
1 small tomato, seeded |
1 tablespoon balsamic vinegar |
1 tablespoon nutritional yeast |
6 sun-dried tomatoes, unsoaked |
water |
2 small zucchini, peeled |
1 small sweet potato, peeled |
Directions:
1. In a food processor, combine pine nuts, olive oil, garlic, lime juice, sea salt, tomato, balsamic vinegar and nutritional yeast. Blend until creamy. 2. Add sun dried tomatoes and blend but leaving some tomato chunks. 3. Add water until sauce is at desired consistency. Sauce should be decently thick. 4. Using spirilizer, made noodles out of the zucchini and sweet potato. 5. Put noodles in a pan on the stove and add sauce. On LOW heat, mix together noodles and sauce until warm to the touch, being careful not to overheat. |
