Ingredients:

  • 3 tbsp paprika
  • 2 1/2 tbsp cumin
  • 2 1/2 tbsp ginger
  • 4 tsp coriander
  • 2 tsp cinnamon (cassia variety)
  • 2 tsp turmeric
  • 1 1/2 tsp fennel
  • 1 1/2 tsp cardamom
  • 1 1/4 tsp allspice
  • 1 1/4 tsp dill seeds
  • 1 1/4 tsp galangal
  • 1 1/4 tsp lavender
  • 1 1/4 tsp nutmeg
  • 1/2 tsp bay leaf
  • 1/2 tsp caraway seed
  • 1/2 tsp cayenne
  • 1/2 tsp clove
  • 1/2 tsp cubeb pepper (or black pepper if you are unable to find cubeb)
  • 1/2 tsp mace
  • 35 saffron strands, stigmas

Directions:

  1. Grind all ingredients and combine.
  2. Store in an airtight container in a cool, dark place.
