Poached Salmon With Spinach and Cheese

Ingredients:

Directions:

  1. Combine water, wine, bay leaf and green onion in a large skillet.
  2. Bring to a boil over high heat.
  3. Carefully add fish and return to a boil. Reduce heat to low, cover and simmer 8 to 10 minutes, until fish flakes easily with a fork.
  4. Remove fish and pat dry.
  5. Preheat broiler on high heat. Line a baking sheet with foil and spray with cooking spray.
  6. Sprinkle spinach with nutmeg and mix lightly. Arrange fish on baking sheet, top with spinach and sprinkle with cheese.
  7. Broil 1 to 2 minutes, until cheese is melted and lightly browned.
  8. Serve immediately and enjoy.
