Ingredients:

  • 4 cups flour
  • 1 tsp salt
  • 1 package dry yeast
  • 1 1/3 cups warm water
  • 2 tbsp olive oil
  • 1 tbsp sugar
  • filling
  • 1 1/2 lb sweet italian sausage removed from casings- turkey sauasge is fine too.
  • 12 oz tomato paste (1 can)
  • 3 tbsp minced onion
  • 2 tsp oregano
  • 2 tbsp olive oil

Directions:

  1. Make dough:
  2. Mix flour and salt in large bowl. Make a well in center add yeast, water, oil and sugar.
  3. Let stand 5 minutes until yeast dissolves foamy.
  4. Beat with spoon to make soft dough.
  5. Knead on a floured surface until smooth and elastic adding more flour as needed.
  6. Place in a greased bowl cover and let rise double.
  7. Make filling:
  8. Crumble sausage and cook over medium high heat to break up
  9. Meat.
  10. Drain off fat.
  11. Stir in paste, onion and seasonings.
  12. Remove from heat and let cool.
  13. Punch down dough and divide in half.
  14. Roll each piece into a 14- x 9-inch rectangle.
  15. Spread 1/2 of filling to 1/2-inch of sides.
  16. Top with 1/2 of cheeses.
  17. Drizzle with oil.
  18. Roll up tightly from one long side.
  19. Pinch edges and tuck under to seal.
  20. Place on large baking sheet seam side down, two inches
  21. Apart.
  22. Bend each roll into a crescent shape.
  23. Bake in a 400F. oven 3o to 45 minutes or golden and done.
  24. Cool 30 minutes before cutting.
  25. Serve warm or at room temperature.
