Ingredients:

  • 1 large onion
  • 1/2 lb long grained rice
  • 2 oz butter
  • 1.1/2 pints of stock
  • 1.1/2 oz cheese

Directions:

  1. MELT TWO THIRDS OF BUTTER
  2. ADD FINELY DICED ONION, COVER AND COOK SLOWLY UNTIL SOFT BUT NOT COLOURED.
  3. ADD RICE, FRY FOR FEW MINUTES UNTIL RICE LOOKS CLEAR, ADD SALT AND PEPPER, THE SAFFRON SOAKED AS FOR RISOTTO, AND 1.1/4 PINTS OF STOCK.
  4. BRING TO BOIL, COVER TIGHLY, PUT IN MODERATE OVEN FOR 20 - 3- MINUTES, UNTIL GRAINS ARE TENDER ADN STOCK ABSORBED.
  5. ADD EXTRA STOCK IF NECESSARY,
  6. WITH FORK STIR IN HE REST OF THE BUTTER AND CHEESE.
  7. TO THIS BASIC RECIPE MAY BE ADDED SHREDDED LEFTOVERS OF CHICKEN, HAM,AND SO ON WITH THE RICE OR STIRRED IN DURING COOKINH.
