Ingredients:

  • 2 cups persimmon pulp
  • 1 tbsp lemon juice
  • 1 tsp soda
  • 1 cup milk
  • 2 cups raisins or currents
  • 2 cups sugar
  • 2 tbsp oil
  • 1/2 tsp cinnamon

Directions:

  1. Mix pulp with lemon and soda then stir in oil.
  2. Add flour and milk alternately.
  3. Add remaining ingredients to flour and pulp mixture then mix well.
  4. Bake in a greased tube pan for 1-1/2 hours at 325.
  5. Check cake after first hour and if cake is browning too rapidly reduce heat to 300.
  6. Let cool 10 minutes in pan.
  7. Poke warm cake with ice pick to make holes then drizzle with brandy.
