  • 2 cups persimmon pulp
  • 1 tbsp lemon juice
  • 1 tsp soda
  • 1 cup milk
  • 2 cups raisins or currents
  • 2 cups sugar
  • 2 tbsp oil
  • 1/2 tsp cinnamon

  • 1 Mix pulp with lemon and soda then stir in oil.
  • 2 Add flour and milk alternately.
  • 3 Add remaining ingredients to flour and pulp mixture then mix well.
  • 4 Bake in a greased tube pan for 1-1/2 hours at 325.
  • 5 Check cake after first hour and if cake is browning too rapidly reduce heat to 300.
  • 6 Let cool 10 minutes in pan.
  • 7 Poke warm cake with ice pick to make holes then drizzle with brandy.
