Oven Fried Snapper

Ingredients:

  • 2 lbs red snapper or 2 lbs perch fillets
  • 1/2 cup oil
  • 3 cloves garlic, pressed
  • 1 tsp salt

Directions:

  1. Rinse fish with cold water, pat dry with paper towels.
  2. Cut fish into four serving size portions.
  3. Combine oil, salt and garlic in oblong baking dish.
  4. Place fish in mixture and let marinate 10 minutes.
  5. Turn and let marinate another 10 minutes.
  6. Remove fish from marinade.
  7. Roll in cheese, then crumbs.
  8. Place on well-greased cookie sheet.
  9. Bake at 500F for 12-15 minutes or until fish flakes easily.
