Old-fashioned Coleslaw Mold

Ingredients:

  • 1 - 3 oz. package. jell-o gelatin , lemon flavor
  • 1/2 tsp. salt
  • 1/2 cup. cold water
  • 1 tbsp. vinegar
  • (note: this is only half the amount of vinegar of what the original recipe calls for. my family is not big on the vinegar taste. i may even add a tbsp. of sugar in my next batch. you may want to add this cautiously, to your taste.)
  • 1/2 cup. mayonnaise
  • 1/2 cup. sour cream
  • 1 tsp. grated onion

Directions:

  1. Dissolve gelatin and salt in boiling water.
  2. Add cold water and vinegar.
  3. Stir in mayonaise, sour cream, mustard and onion, blending thoroughly.
  4. Chill until thickened.
  5. Fold in cabbage, pimiento, and parsley.
  6. Pour into 4-cup mold or serving bowl.
  7. Chill until firm, about 3 hours.
  8. Unmold.
