Oatmeal Brunch Casserole

Ingredients:

  • cooking spray
  • 1 1/2 tsp margarine
  • 1/2 cup rolled oats
  • 1/2 cup apple
  • 2 tbsp walnuts
  • 1/4 tsp vanilla
  • 1/8 tsp salt

Directions:

  1. Lightly coat a 1-quart casserole with cooking spray; set aside. In a small saucepan bring the milk and margarine to boiling. Slowly stir in oats. Stir in apple, dried cherries, walnuts, vanilla, and salt. Cook and stir until bubbly. Cook and stir for 2 minutes more. Pour into the prepared casserole.
  2. Bake in a 350° oven for 10 minutes. Sprinkle with brown sugar. Bake about 5 minutes more or until bubbly around the edges. Cool slightly. If desired, serve the warm oatmeal with additional milk.
  3. Recipe Tip: For 4 servings: Prepare as above, except use a 1 1/2-quart casserole and a medium saucepan (in step 1).
