Ingredients:

Directions:

  1. Rinse your quinoa well and if preferred toast it before cooking it (for directions to do this see Quinoa-Toasted).
  2. Place quinoa and veggie broth in a medium sauce pan and bring to a boil. Lower heat and simmer until tender (about 20 minutes). If there's liquid left, drain it off. Allow to cool.
  3. Meanwhile combine bell pepper, cheese, basil, pepper and shredded havarti cheese. When quinoa is cool, add it to the cream cheese mixture and stir to combine.
  4. Spread about 1-2 tbs of the cream cheese quinoa mix on 3 of the bread slices. Top with iceberg lettuce if using and then top with remaining bread slice. If you like slice diagonally into smaller sandwiches. Enjoy!
