Mom's English Muffin Bread

Ingredients:

  • 1 cup milk
  • 1/4 cup water
  • 1 tbsp cornmeal
  • 3 cups bread flour
  • 1 package active dry yeast
  • 1 1/2 tsp sugar
  • 3/4 tsp salt
  • 1/4 tsp baking soda

Directions:

  1. Warm the milk and water in a small saucepan until very warm (110'-120' degrees F) Lightly grease a 8x4 inch loaf pan; sprinkle cornmeal inside pan.
  2. In a large bowl, mix together 1 1/2 cups of the flour, yeast, sugar, salt and soda.
  3. Stir milk into the flour mixture; beat well.
  4. Stir in the remaining flour, 1 cup at a time, until a stiff batter is formed.
  5. Spoon batter into prepared pan.
  6. Cover and let rise in a warm place for about 45 minutes until nearly doubled in size.
  7. Preheat oven to 400 degrees F.
  8. Bake until golden brown, about 25 minutes.
  9. Remove from pan immediately and cool on wire rack.
  10. This is best sliced and toasted.
