Directions:

  1. Preheat oven to 350 degrees.
  2. Preheat a medium-sized pot to medium heat. Chop onions and garlic. Place butter in preheated pan, followed by onion and garlic. Heat until softened, stirring occasionally.
  3. Add tomatoes and taco seasoning. Mix well.
  4. Add corn and black beans to pot and mix thoroughly.
  5. Place tortillas in pan you plan to use, trimming to fit. Save scraps to fill in any gaps. Remove from pan.
  6. Put one cup of the vegetable mixture in the bottom of the pan and spread it out. Add two layers of tortillas (using the excess pieces to fill in holes, if needed), two more cups of the vegetable mixture, and a generous handful of cheese. Continue these layers until you run out of ingredients.
  7. Bake for 30 minutes or until everything is bubbly and gooey. Enjoy!
